Grandma Helen’s Rhubarb Crumble

 
Preheat oven to 350
  For crust: 1 1/2 cup oats 1 cup brown sugar
1/2 teaspoon salt
1 1/2 cup all purpose flour 
1 cup shortening (I use coconut oil)
1/4 teaspoon baking soda Combine until crumbly then pat half of mixture into 13×9 pan 

  For filling: 5 cups rhubarb 
1/2 cup sugar
 3 Tablespoons cornstarch 
1/4 cup water Combine in a pan and cook until clear then add 1 teaspoon vanilla Pour over crust and sprinkle the other half of the crumbly crust on top.
 Bake 20 to 25 min




 The Rhubarb Patch is a sweet book that teaches about love in odd places and friendships that last a lifetime. 

Scott is a city boy who inherits his estranged grandmother's property after she passes. He doesn't know what he's going to do with his three acres of land and his house full of odd knickknacks, but figures it's best if he goes and tries out country living for a while. 

Then he meets Phin. Phin with his big body and even bigger personality, he's a little older than Scott, a little wiser, and a little more closed off. 

The two of them have nothing in common. Except their loneliness.

As they develop a tentative friendship other emotions begin to stir up. 

I loved the friendship between the two characters. You could tell each one was thought out, each interaction meant something, and the love that bloomed was beautiful.   

This book is a sweet romance that had me smiling and laughing and enjoying. It made me want to appreciate life and love and friendship that much more. 

If you're looking for a sweet, beautiful book then this one is for you.
